There are few meals that capture the spirit of gathering quite like paella. Cooked in one pan and served family-style, it's designed to be shared, encouraging everyone to slow down, savor the moment, and enjoy good conversation.
Whether you join us for Paella on the Patio at Stone House Vineyard or prepare it in your own backyard, this iconic dish pairs beautifully with a leisurely summer afternoon and a favorite bottle of wine.
A Simple Summer Seafood Paella

Ingredients
- 2 tablespoons olive oil
- 1 small onion, diced
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1½ cups Arborio or short-grain rice
- 1 teaspoon smoked paprika
- ½ teaspoon saffron threads (or a pinch of saffron powder)
- 3½ cups chicken or seafood stock
- 8 ounces smoked sausage, sliced (optional)
- ½ pound shrimp, peeled and deveined
- ½ pound mussels or clams, cleaned (optional)
- 1 cup frozen peas
- 1 lemon, cut into wedges
- Chopped fresh parsley for garnish
- Salt and freshly ground black pepper to taste
Directions
- Heat the olive oil in a large paella pan or wide skillet over medium heat.
- Sauté the onion and bell pepper until softened, then add the garlic and cook for another minute.
- Stir in the rice, smoked paprika, and saffron, coating the grains with the flavorful oil.
- Pour in the stock and bring to a gentle simmer. Avoid stirring once the rice begins cooking.
- Add the sausage, if using, and cook for about 15 minutes.
- Arrange the shrimp, mussels or clams, and peas over the rice. Continue cooking until the seafood is done and the rice is tender.
- Remove from the heat, cover loosely with a towel, and let rest for five minutes.
- Garnish with parsley and serve with fresh lemon wedges.
