Tasting Room and Winery open Thursday, Friday, Saturday and Sunday from 12:00 pm to 5:00 pm and by appointment. Also available for special events.
The winery is designed to follow traditional winemaking techniques. The winery is constructed with massive limestone blocks, each weighing well over two thousand pounds. Also incorporated are refrigeration panels in the large barrel room and tank room where we have open top stainless steel fermenters.
Our winemaking process is labor intensive and very much hands on. Our grapes are picked by hand early in the morning, taken back to the winery where they are destemmed and gently crushed. We cold soak the must for a few days and when fermentation initiates the caps are hand plunged 3 to 4 times daily.
The barrel room is atmospherically controlled at 58 degrees F year round to maintain the quality maturation of barreled wine. We use only premium French oak barriques (225 litres).
